Margarita Cake

Margarita. Cake. Need I say more?

This recipe really sells itself. Tangy lemon-lime flavors with a hint of tequila and triple sec all in a fluffy cake with a margarita glaze on top…there’s nothing I don’t love about this dessert!

I especially love that it comes together quickly and easily. With a lemon box cake base and some vanilla pudding mix, you’ll have a delicious, margarita cake in no time. See how it’s done in the video below!

To get started, preheat the oven to 350 degrees and grease and flour a 10 inch Bundt pan. Then, combine cake mix, pudding mix, eggs, vanilla extract, oil, water, lime juice, 1/4 cup tequila, and 2 tablespoons triple sec in a large bowl. Beat for 2 minutes.

Next, pour the batter into the prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm. Garnish with lime zest.

To make the glaze: In a small bowl, combine confectioners’ sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth. You may need to add more sugar if you want the glaze to be thicker.

  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable oil
  • 2/3 cup water
