Lemon Shorties

For some people a good pie is their ultimate treat, for others the classic chocolate chip cookie reigns supreme. But, there’s another camp for whom shortbread is the holy grail of all desserts, which is where these lemon shorties come in.

You can have them with tea, after dinner, or anytime you want a rich and zingy snack. The addition of a citrusy glaze is topped off perfectly with a little sprinkling of fresh lemon zest. They ate guaranteed to bring a little sunshine to anyone who eats them.

This recipe starts like many other shortbread recipes, but has a bit more moisture in the dough thanks to a touch of fresh lemon juice in the mix. This adds a lot of flavor and it means that the cookies aren’t as brittle as some other shortbreads- not that there’s anything wrong with that.

Once the dough has been chilled you can can roll the dough out and use a cookie cutter to cut out the cookies. Or you can make little balls with your hands and then flatten them with the bottom of a flat glass or bowl. Either method will result in truly delicious cookies!

Once these come out of the oven the glaze for these cookies is incredibly easy. Simply mix together powdered sugar, fresh lemon juice, and a little milk. Drizzle this over each cookie and then before the glaze sets sprinkle on some fresh lemon zest for that extra special touch.

As a dessert or a snack these cookies are bursting with citrus flavor that will make them a welcome addition to any table or gathering.

For the dough:
  • 1 cup(2 sticks) butter, softened
  • 1 cup confectioners sugar
  • 2 tablespoons fresh lemon juice
  • 1 pinch of salt
  • 2 1/2 cups of all-purpose flour
For the glaze and topping:
  • 1 cup confectioners sugar
  • 1 1/2 tablespoon fresh lemon juice
  • 1/2 tablespoon milk
  • 1 teaspoon fresh lemon zest
Preparation
  1. Cream together butter and sugar and then add lemon juice. Sift in salt and flour. Mix until a sandy mixture forms then keep mixing until dough holds together.
  2. Form dough into a ball and roll out to “1/3. Cut out circles from dough using cookie cutter. Place on baking sheets and refrigerate for 2 hours.
  3. Preheat oven to 375˚F. Bake cookies for 6 minutes. Cookies won’t brown so do not over-bake.
  4. Allow to cool on cookie sheets for 5 minutes before removing to wire racks to cool completely. Once cool combine confectioners sugar, lemon juice, and milk until a thin glaze forms. Drizzle glaze over each cookie and then top with a sprinkle of lemon zest before icing sets completely. Allow to set before serving.
