Kentucky Derby Casserole
Ingredients
- 16 oz frozen shredded hash browns
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz cooked cubed ham
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 green onions, diced
- 5 large eggs
- 1/2 cup milk
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
Preparation
- Preheat oven to 350 degrees F and grease a 9x13-inch baking dish.
- Spread the hasbrowns in the bottom of the baking dish and season with salt and pepper. Sprinkle ham over the hashbrown layer, followed by the cheddar, mozzarella, and green onions.
- In a medium-sized bowl, whisk together eggs, milk, onion powder, garlic powder, paprika, and salt and pepper to taste.
- Pour egg mixture evenly over the top of the casserole.
- Bake for 40-45 minutes or until eggs are set through.
- Serve warm.
