These sweet and tart bites take their inspiration from a Lemon Bar, but utilize a softer crust and bring in the tropical flavor of coconut for a sweet treat that’s a little more chewy but still so sunny and bright and plenty indulgent. You can serve these as square bars or cut them into smaller bite-sized portions, they’re rich and delicious no matter how you serve them.

What Ingredients Do You Need for Lemon Coconut Bites?

A lot of it is stuff you probably have in your pantry. You’ll need:

  • Flour, sugar, baking powder, and salt.
  • Some powdered sugar.
  • Butter.
  • Eggs.
  • A few lemons.
  • Sweetened shredded coconut. (The sugar coating helps it toast better.)

How do You Make Lemon Coconut Bites?

I’m always surprised at just how simple these are for a bar with a couple of layers! The first step is to make the crust, which just involves cutting some butter into some flour and powdered sugar until it’s nice and crumbly. Then, you press it into a 9×13-inch pan, which is easy to do as the mixture is easy to work with.

Next, beat together the eggs and granulated sugar with some lemon juice, lemon zest, and the baking powder and pour it evenly over the crust. Easy, right? Get that in the oven for about ten minutes, then sprinkle it with the coconut and put it bake in the oven until it’s barely jiggly, about ten more minutes.

You’ll want to let these cool completely before you slice them, but they should set up beautifully. They’re bright and sunny with the chew of toasted coconut. Delicious!

A note: if you want a more substantial separation between the crust and the filling, you can bake the crust for 6-8 minutes before pouring the filling over the top. That will provide a crispier crust and a little more crunch if that’s something you prefer.
