No need for all the rolling and cutting – in just 5 minutes you can have this Irish Cheddar Soda Bread in the oven without all the fuss. This extra-cheesy loaf is especially delicious served fresh from the oven topped with butter!

A few pantry staples and some cheese is all you need:
- All Purpose Flour
- Baking Powder
- Baking Soda
- Salt
- Butter
- Buttermilk
- An Egg
- Cheddar Cheese

For best results, serve with lots of room temperature butter!
How do you Make Irish Cheddar Soda Bread?
You won’t find an easier bread recipe than this one:
Start off by preheating your oven to 375 degrees and greasing up a standard loaf pan (use butter for best results!). Mix up your dry ingredients in a bowl then add in ice cold butter that’s been grated using a cheese grater and work it into the dry mix with your fingertips or a pastry cutter until the mixture is sandy in texture with little pea-sized bits of butter still visible, then toss in the cheese.

In another bowl whisk together your egg and buttermilk then pour the liquid into the bowl with the dry mix. You’ll want to mix quickly but thoroughly so there are no dry spots in your dough. Transfer your dough into the loaf pan and pop it straight into the oven for 35-40 minutes, or until its toasty and brown on top and a cake tester comes out clean.

You’ll want to remove it from the loaf pan soon after taking it out of the oven to prevent the exterior from going soggy. We like serving it straight away with lots of room temperature butter!

Ingredients
- 2 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons kosher salt
- 4 tablespoons unsalted butter, cold, grated
- 1 1/4 cup buttermilk
- 1 egg
- 1 cup Irish cheddar, grated
Preparation
- Preheat the oven to 375 degrees F and grease a standard loaf pan (8x4 inches).
- In a large bowl, combine the flour, baking powder, baking soda, and salt and whisk to combine.
- Add the grated butter (grated cold on a box grater), and use your fingertips or a pastry cutter to cut in the butter until it is the texture of wet sand with pea-sized clumps of butter, then toss in the cheese.
- In a separate bowl, whisk together the egg and buttermilk, then pour into the bowl with the dry ingredients.
- Mix briefly but thoroughly until just combined, then transfer the mixture to the prepared loaf pan.
- Bake for 35-40 minutes until golden brown with a clean cake tester.
