Chicken à la King is one of those old-school comfort meals that never really goes out of style. It’s creamy, savory, and made with ingredients most of us already have on hand. This is the kind of recipe that was meant to stretch leftover chicken into something warm and filling, and it still does that job beautifully today!

Everything comes together in one skillet or Dutch oven, which makes cleanup easy. Butter melts down with diced onion and sliced mushrooms until they’re soft and fragrant. From there, the seasonings go in, followed by flour, which cooks briefly to form a roux. This step is what gives the finished dish its rich, velvety texture.

Next up, chicken stock is stirred in slowly, then half and half. A few minutes over low heat is all it takes for the mixture to thicken into a creamy base. Once that happens, shredded chicken, frozen peas, and pimentos are folded in, adding color and heartiness without much extra work.

This Chicken à la King is best served hot and cozy. Spoon it over biscuits, toast, or noodles for a classic meal that feels both nostalgic and satisfying. It’s simple, dependable comfort food, can’t beat it!
