Frozen Blueberry Cookies
A fruity treat for any time of year!

If I was stranded on a desert island and could only have one food, I very well might pick blueberries. They are a top tier fruit in my opinion, and I have no restraint when they’re in the house. So, when I came across a recipe for these Frozen Blueberry Cookies, it instantly went into my “To-Try” folder. Their gorgeous purple color and use of real berries had me more than intrigued.


As the name suggests, the recipe calls for frozen berries that are heated until fully thawed and then mashed (the step that gives that vibrant color!). I loved the use of frozen berries because off seasoning blueberries can often leave a lot to be desired flavor wise. That makes this recipe one you can whip up all year long. And once you taste these cookies, you’ll want to do just that!


Another note for the recipe is that you’ll see plant-based butter in the ingredient list. These butter alternatives are typically less yellow in color which helps the final cookies stay bright purple. You can absolutely sub in regular butter if that’s all you have on hand or what you prefer, just be aware the color might look slightly different. Frozen Blueberry Cookies
Ingredients
- 2 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2/3 cup unsalted vegan butter, softened
- 2/3 cup granulated sugar
- 1 teaspoon lemon juice
- 2/3 cup frozen blueberries
- 1 cup white chocolate chips
Preparation
- Place blueberries in a small microwave-safe bowl and heat blueberries until fully thawed. This should take 60-90 seconds. Set aside to cool.
- Sift together flour, baking powder, and salt in a small bowl.
- In a large bowl, cream together butter and sugar until light and smooth. Add blueberries and mix until the berries are slightly mashed and well combined.
- Slowly add in the dry ingredients until fully incorporated, then mix in the white chocolate chips.
- Cover and chill dough for at least 30 minutes.
- When ready to bake, preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Scoop or roll chilled dough into cookies and space evenly on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are just starting to brown.
