Nothing starts off the day like opening a fridge and having a morning meal ready before you. While we may not have that futuristic lifestyle like the Jetsons, a teeny-tiny bit of prep can lead to amazing results, as seen with this recipe for Easy Chia Pudding. Part breakfast treat and part dessert, this recipe has a simple bit of preparation, but it leads to a creamy pudding that’s topped with satisfying crunchy garnishes.

While there are a slew of chia pudding recipes out there, this version is super streamlined. Vanilla works in tandem with honey to bring a sweet touch to this plant-based creamy milk and chia seed pudding. 

A quick from-scratch granola is kissed with a bit of warm cinnamon notes and paired up with walnuts to really add to the textural crunch factor. Finally, berries are mixed with a bit of lemon to add that well-needed fruity acidic punch.

Portioned into mason jars or small bowls, the chia pudding then gets garnished with berries and granola.

With only four ingredients, you’ll be surprised how much flavor the chia pudding has on its own. The vanilla bean paste and honey have a wonderful floral component to them and add a mellow and satisfying level of sweetness to the pudding.

The quick granola is a great addition. Cinnamon adds a depth of warmth, while the chopped walnuts add that well-needed bite.

Berries brighten everything up and break up the creamy and crunchy factors with a dose of acidity. Other toppings like raisins, peanut butter, and chocolate chips give this pudding a bit of variety.

For the Granola:
  • 2 tablespoons unsalted butter
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 cup rolled oats
  • 1/4 cup finely chopped walnuts
For the Chia Pudding:
  • 1 cup chia seeds
  • 4 cups plant-based milk
  • 1 tablespoon plus 1 1/2 teaspoons honey
  • 1 tablespoon vanilla bean paste
For the Berries:
  • 1 pint raspberries
  • 1 pint strawberries, sliced
  • 1 pint blueberries
  • 1/4 cup granulated sugar
  • 1/4 cup lemon juice
For Garnish (optional):
  • mint leaves
  • raisins
  • peanut butter
  • mini chocolate chips
To make the Granola:
  1. In a saucepan, melt butter. Add brown sugar and cinnamon cooking and stirring frequently until the sugar is dissolved.
  2. Add in oats and walnuts, stirring to combine.
  3. Transfer the mixture to a parchment lined baking sheet and let it cool completely.
To make the Chia Pudding:
  1. While the granola is cooling, prepare the chia seeds. In a bowl whisk chia seeds, plant-based milk, honey, and vanilla together. Wrap the bowl in plastic wrap and let it rest in the refrigerator for 1 hour, mixing every 15 minutes to ensure that the seeds are properly hydrated and there are no dry spots.
To make the Berries and assemble:
  1. When the chia pudding is in the fridge and the granola is cooling, prepare the berries. In a bowl gently toss the raspberries, strawberries, and blueberries with lemon juice and granulated sugar.
  2. Once everything is prepared, portion out the chia pudding into bowls or small mason jars. Top the chia pudding with berries or granola. Garnish with some mint leaves and enjoy!
