If you’re a dill pickle fan then we might just have your new favorite recipe! Maybe it’s because I grew up with parents that pickled everything, but I am in love with all things briny. A good, crispy dill pickle ranks at the top of the list. So when I came across the idea of a Dill Pickle Salad I had to give it a go. I wanted to keep the recipe fairly healthy and go all in on the dill flavor. And I think I succeeded! The final results were creamy, crunchy, and packed with briny pickle flavor.

For a good, hardy base, this salad starts with kale and shredded cabbage. They’re sturdy enough greens to hold up to a creamy dressing and keep well for meal prep. The dressing consists of greek yogurt, a heaping cup of pickles, some brine, and a couple other spices to bump up the flavor. A teaspoon of maple syrup rounds out the taste with a bit of sweetness and your dressing is complete. Puree it all together in a blender or food processor and add salt and pepper to your desired taste.

Now, the salad is set for assembly! Pour your homemade dressing over the greens and top with parmesan, cheese crisps, and croutons. Yum!

Ingredients
  • 3 cups kale, roughly chopped
  • 2 cups cole slaw mix (shredded cabbage)
  • ¼ cup dill pickles, sliced
  • ¼ cup fresh dill, chopped
  • Half a small red onion, thinly sliced
  • ⅓ cup shredded parmesan cheese
  • 1 cup croutons
  • Optional: ½ cup cheese crisps
Dressing
  • ½ cup plain greek yogurt
  • 1 cup roughly chopped dill pickles
  • 2 tablespoons pickle juice
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1-2 teaspoons maple syrup or honey
  • Salt and pepper to taste
Preparation
  1. In a blender or food processor, combine all dressing ingredients and pulse just until smooth.
  2. In a large salad bowl, combine the kale, coleslaw mix, pickles, dill, and red onion.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with parmesan, croutons, and cheese crisps.
