
Fresh salads are one of life’s simple pleasures. They don’t take long to make, but they’re packed with nutrients. And, done right they’re also packed with flavor! This Cucumber Bacon Salad is so creamy and savory that you might not think of it as “regular” salad. It comes together so quick, but leaves a lasting impression at dinner. And, it’s an ideal lunch dish, too.
The Fabulous Dressing

To flavor this salad we’re making a dressing that uses some ingredients you probably already have on hand, including some Old Bay seasoning. If you love this spice blend then you already know how good it makes food taste!
For those who don’t know it’s a savory seasoning mix that includes celery salt and paprika, among other spices. It’s good on seafood, but it’s good on just about everything else, too.

To Make the Salad
For the veggies we’re keeping it simple with just cucumber and tomatoes, but you could change this up with some bell peppers, yellow onion, or other veggies you enjoy. For the best texture English cucumbers are great for this salad since they have fewer seeds and a thinner skin.

For the bacon I find that the thick cut slices work best for this salad since they give a good bite. This would be a great way to use up some leftover bacon slices, too.

And, we can’t forget the cheese here! Shredded cheddar is the easiest to add, but cubed cheese would also give a good texture in this dish. Either way, the cheese gives just the right balance of flavors here.
How to Serve This Salad

For the best flavor let this salad sit in the fridge for 30 minutes to let the flavors come together fully.

A little crunch, some creamy flavor, and the smokiness of bacon make this Cucumber Bacon Salad a hearty addition to any table. And, it’s great for potlucks and parties, too.
Cucumber Bacon Salad

Ingredients
- 2 English cucumbers, sliced
- 1 lb cherry or Campari tomatoes, sliced in half
- salt and pepper to taste
- 1/2 teaspoon Old Bay seasoning or to taste
- juice of 1 lime
- 3/4 cup ranch dressing or to taste
- 1/4 cup shredded cheddar cheese
- 5 slices thick cut bacon, cooked and crumbled
Preparation
- Combine cucumbers, tomatoes, salt, and pepper in mixing bowl.
- Whisk together Old Bay seasoning, lime juice, and ranch dressing. Pour over veggies and toss to combine.
- Add cheese and bacon and toss again. Transfer to serving bowl and chill for at least 30 minutes before serving.
