The combination of chicken, cheese and broccoli is rich and satisfying, and this one-dish dinner heats up beautifully as leftovers. In fact, we think it may be even better the second time around. While it tastes as if it took hours to prepare, you can get this yummy casserole on the table in just over 30 minutes!

Ingredients
  • 4 cups broccoli, fresh or frozen, cooked
  • 2 cups chicken, cooked and shredded
  • 1/2 can condensed cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon curry powder
  • 1 teaspoon curry powder
  • 1/2 cup cheddar cheese, shredded
  • 1/3 cup bread crumbs
  • 2 tablespoons butter, melted
Preparation
  1. Preheat oven to 450º F. Layer broccoli and chicken in a 9-by-9-inch baking dish.
  2. Mix together soup, mayonnaise, lemon juice and curry powder. Pour it over chicken and broccoli, and stir together.
  3. Sprinkle cheddar cheese over casserole, then, in a small bowl, whisk together breadcrumbs and melted butter.
  4. Sprinkle breadcrumbs over casserole and place baking dish in oven.
  5. Bake for 20 minutes, or until cheese is bubbly. Serve immediately.
