At my house, we eat chicken for dinner most nights of the week. (If I’m being honest, my daughter often says, “Chicken again??“) Why? It’s healthy, it’s (relatively) cheap, it’s something I can make without thinking too much about it. And this oven-baked option is a definite go-to. Full of fajita flavor, but with a creamy touch, it’s versatile and delicious. Serve it over rice, pile it into tortillas, top a salad with it… the options are all tasty.

What Ingredients Do You Need for Cream Cheese Fajita Chicken?

It’s a short list! You’ll need:

  • Chicken breasts.
  • A yellow onion.
  • A couple of bell peppers.
  • Cream cheese.
  • Cheddar cheese.
  • Chili powder, cumin, garlic powder, onion, powder, and salt and pepper.

Though you can use your favorite seasoning mix in place of the last line there.

How Do You Make Cream Cheese Fajita Chicken?

This is a very easy one.

The first step is to mix together the ingredients for the seasoning mix and rub them all over the chicken. The spices in that mix are easy to change out — add some oregano or go heavier on the cumin. You can even scrap it all and use your favorite taco seasoning or another mix you have on hand.

Slice up the bell peppers and onion and scatter them in the bottom of a baking pan. Then, simply place the chicken on top…

… top each breast with a couple of slices of cream cheese, and finally a little topping of cheddar.

Pop the dish in the oven until the chicken is cooked through. The time will depend largely on the size of the chicken breasts, so it can be as short as 20 minutes, or it can take as much as 40. Let your thermometer be the guide!
