Ingredients
  • ~ 6 cups Animal crackers
  • 3/4 cup brown sugar
  • 3/4 cup butter
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons cinnamon
Preparation
  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Pour crackers into a large bowl, then set aside.
  3. n a medium-sized saucepan, add brown sugar, butter, and corn syrup. Stirring constantly, bring mixture to a simmer then continue cooking for 2 more minutes.
  4. Remove pan from heat and stir in vanilla and baking soda. Mixture will bubble and expand in size.
  5. Pour the caramel mixture over the crackers and stir to evenly coat.
  6. In a small bowl, sift together granulated sugar and cinnamon, then sprinkle over the crackers. Toss again until evenly coated.
  7. Transfer cereal to the prepared baking sheet and bake for 10 minutes, stirring halfway through.
  8. Separate crackers into clumps or individual crackers if desired then allow the crunch to fully cool before storing in an airtight container.
