Broccoli is one of those things you either love or hate. I grew up not liking the green, tree-like veggie, but have since found some tasty ways to prepare it! Like this Cheesy Broccoli Ritz Casserole. Granted, pretty much anything is better with a deliciously creamy, cheesy sauce, and broccoli is no different!

The base of this casserole is, of course, broccoli. I’d argue that the real star of the show is the creamy sauce. With mayo, cream of chicken soup, butter, spices, and more, this is one side dish you won’t want to pass up. Sprinkle a thick layer of cheese on top, followed by crushed Ritz crackers, and you’ve got yourself a recipe even the broccoli haters will want to try!

To make this delicious side dish, start by preheating the oven to 350 and greasing a 9 x 13 baking pan with nonstick cooking spray. Set aside. Next, chop the broccoli crowns into bite-sized pieces and steam or boil broccoli until soft. Spread out broccoli in the bottom of your prepared dish.

In a large bowl, pour melted butter, mayonnaise, cream of chicken soup, and diced white onion and mix well. Stir in both eggs, 1 cup of shredded cheese, garlic, paprika, and salt and pepper. Mix well. Spread mayo mixture over the broccoli in an even coat. Sprinkle remaining shredded cheddar cheese on top and then pour crushed Ritz crackers over everything, spreading into an even layer.

Bake for 30-40 minutes or until heated through. Serve up warm! This is one side dish you may want to double the recipe. It’s that good! Friends and family will be coming back for seconds and thirds. Don’t say I didn’t warn you! Go ahead and check out the recipe below!

Ingredients
  • 3-4 crowns (not stalks) fresh broccoli, cooked and drained
  • 1 cup real mayonnaise
  • 1 can cream of chicken soup
  • 4 tablespoons butter, melted
  • 1/4 cup diced white onion
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1-1/2 cup shredded sharp cheddar cheese
  • 1 sleeve, Ritz crackers, crushed
Preparation
