Using dark brown sugar and dark corn syrup are essential here for getting that deep butterscotch flavor, so double check you have the right stuff before you start baking. The other detail to pay attention to is how you pour the boiling water over the batter. You’ll want to soften the stream of water by holding the backside of a spoon right over the cake and then letting the water gently hit the spoon and drip off. Using this method the water won’t disrupt the batter.



After about 40 minutes in the oven, the cobbler will be golden and bubbling with a soft, cake-like top and a rich butterscotch sauce below. Carmen's Butterscotch Cobbler

Ingredients
- 1 ¼ cup all-purpose flour
- ⅓ cup dark brown sugar
- 2 teaspoons baking powder
- ½ cup butter, melted
- 1 egg
- ½ cup whole milk
- ¼ cup dark corn syrup
Topping
- ¾ cup dark brown sugar
- 2 tablespoons cornstarch
- 1 3/4 cups boiling water
Preparation
- Preheat oven to 350 degrees F and grease a round 9-inch baking dish.
- For the topping: In a small bowl, sift together the 3/4 cup brown sugar and cornstarch, then set aside.
- In a large bowl, combine flour, ⅓ cup brown sugar, and baking powder. Mix until evenly combined.
- Stir in butter, egg, milk, and corn syrup until just combined.
- Transfer batter to the prepared baking dish and sprinkle the brown sugar and cornstarch mixture evenly over the top.
- Boil water, then carefully pour the water onto the back of a large spoon and let it run off onto the top of the cake. Drizzle water evenly over the whole surface of the cake.
- Bake cake for 40-45 minutes or until an inserted toothpick comes out clean.
- Scoop to serve and drizzle the sauce in the bottom of the dish over top. Great served with vanilla ice cream!
