Baking Powder

Baking powder is used in almost every baked goods recipe. It’s a leavening agent that adds volume and a light texture to baked goods. For 1 teaspoon of baking powder, you can replace with 1/2 cup of buttermilk + 1/4 teaspoon of baking soda. Make sure to decrease the other liquids in the recipe to ensure the same consistency. You can also use 1/4 cup of molasses + 1/4 teaspoon of baking soda for every 1 teaspoon of baking powder. In some cases, you can skip the baking powder altogether and replace a liquid (either milk or water) with club soda or whipped egg whites. Both club soda and egg whites will give added volume to any recipe.
