Every fall, I always buy too many apples that I let sit and stare at me from my fruit bowl. Sometimes I don’t feel like making an intricate recipe like an apple pie or apple muffins and other times I don’t want to just eat my apples with plain old peanut butter. This recipe is the perfect happy medium, as it requires minimal ingredients but gives you an easy, delicious apple dessert all wrapped up in a decadent puff pastry shell.

Let’s start with the most important ingredient — the apples. When baking an apple-forward recipe, I am always going to lean towards Honeycrisp. Their sweet and juicy flavor is just unmatched during the fall season. But this recipe would work with Gala or Granny Smith if you’re looking for a tarter favor to balance out that sweet.

When cutting the apple, you want to stand the apple up and cut it vertically, so your slices still have that apple shape, about 1/2-inch thick. I found this size bakes out perfectly where the apple is soft but doesn’t completely lose its bite. A circular biscuit cutter works well to core out the middle of the apple slices. You want them to be big enough that you can wrap the puff pastry without breaking the edges.

When making an apple dessert, you or course have to add cinnamon, so I coated my apple slices with a cinnamon sugar mixture. It helps to coat the apple slices one by one or the apple juices turn the cinnamon sugar into a sticky, drippy mess by the time you’re ready to wrap them with the puff pastry.

Now, it’s time to wrap! Cut your puff pastry into 1-inch strips and cover the entirety of the apple slices, most of them requiring 1-2 strips of puff pastry. The puff pastry can be tricky to stay wrapped in the beginning but as soon as you get a few more wraparounds on there you’re good to go! Then just continue to coat, wrap, repeat, coat wrap repeat… You get it. I wanted these to have a crisp golden color when they came out so I brushed the tops with some egg wash and added a little more cinnamon sugar for good measure. Once you get them all lined up on your baking sheet, it’s time to watch those babies rise.

Once these come out looking nice and golden, you can dress them however you’d like! I opted for a simple glaze drizzle but they would be delicious with a dusting of powdered sugar or even some more cinnamon. I swear these tasted like I just got them freshly baked at my local fall farmer’s market and I seriously could not have just one. Enjoy, and happy apple season!

For Ring-Arounds:
  • 1 lb honeycrisp apples, sliced
  • 1 package (2 sheets) puff pastry
  • 2 teaspoons cinnamon
  • 1/2 cup sugar
  • 1 egg
For Glaze:
  • 1 teaspoon milk
  • 1/3 cup powdered sugar
For Ring-Arounds:
  1. Preheat oven to 375° F. Combine sugar and cinnamon into small bowl.
  2. Cut apples vertically into 1/2-inch slices and core out center. Cut pastry sheets into 1-inch strips.
  3. Coat apple slice with cinnamon sugar. Take one puff pastry sheet and wrap the apple slice through the center until entire slice is covered, some slices might require two sheets.
  4. Repeat process and place ring-arounds on a lined baking sheet.
  5. Brush each pieces with egg wash and sprinkle on remaining cinnamon sugar. Bake 12-15 minutes until golden.
For Glaze
  1. Combine milk and powdered sugar until desired consistency.
  2. Allow ring-arounds to cool then drizzle glaze as desired. Enjoy!
