Cobbler desserts have long been one of the staples of many cuisines. They’re easy to make and always come out deliciously sweet and buttery. For a fun take on this classic thss apple pinwheel cobbler uses swirls of rich dough to create a visually interesting cobbler.

To start this recipe melt some butter in the preheating oven in the pan for the cobbler. This rich base will add a lot of flavor to the recipe, as well as ensuring that no part of the cobbler sticks to the pan.

You’ll also need to create a simple dough for the pinwheels which is made easier using a food processor to combine the ingredients. Roll the dough out into a rectangle then top with your chopped, diced apples.

Gently roll the dough into a swirl, then cut into 10 or 12 pieces to create the pinwheels. You lay the sliced side up in the buttered pan and then pour a thin syrup of brown sugar and water over the top. This gives the dessert a lot of moisture and makes a sauce in the bottom of the pan as it cooks.

Ingredients
  • 1 1/2 cups brown sugar, divided
  • 1 1/2 cups water
  • 3/4 cup butter, divided
  • 1 1/2 cups self-rising flour
  • 1/3 cup milk
  • 2 Granny Smith apples, peeled and finely chopped
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground ginger
Preparation
  1. Preheat oven to 350˚F. In a small saucepan combine water and 1 1/4 cup sugar and heat over medium heat until sugar is dissolve, about 3-5 minutes. Set aside.
  2. Place 1/4 cup butter in 9" round deep-sided baking dish. Place in warm oven until just melted then remove from oven and set aside.
  3. In a food processor combine remaining butter with flour and pulse until sandy mixture forms. Add milk and pulse again until dough just barely holds together. Turn out dough onto floured work surface and roll to 10"x14 "rectangle.
  4. Combine apples with remaining sugar, cinnamon, cardamom, and ginger. Sprinkle apples all over dough. Then roll up, turning the bottom long side in first to create a roll. Cut into 10-12 slices.
  5. Lay each slice flat in the baking dish. Pour syrup over top and bake for 40-45 minutes or until dough is cooked and tops are beginning to brown slightly. Allow to cool for 20 minutes before serving.
