With Spring fast approaching, there’s nothing better than getting in as many greens as possible. If your family is anything like mine, getting them to eat their vegetables can be like pulling teeth, especially those leafy greens. No matter how tasty the adults think my salads are, the kids are a much harder sell. But THIS casserole on the other hand, this casserole was a homerun with everyone! It’s not hard to see why when we’ve mixed a hefty dose of spinach in with plenty of garlic and cheese and baked it all to golden brown perfection. Yes, romaine lettuce is the base, but this isn’t one of those salads that’s mostly leafy greens with just a couple other add-ins; this is more like alllll the add-ins you can think of with just a handful of greens thrown in for good measure. Creamed spinach is a luxuriously decadent way to eat your leafy greens. Typically this is a side dish that we associate with the holidays, but there’s no reason why we can’t enjoy this year round. By adding potatoes and a ton of cheese, we can turn this into a hearty side dish that is perfect for a dinner party or a weeknight dinner. We’re always looking for ways to sneak more leafy greens into our meals. Going beyond a salad means looking for delicious and easy veggies that will make our family say “mmm-mmm” instead of “eww”.
