Use Room Temperature Ingredients

We know, it’s easier to just plop the butter, milk, and eggs straight into the bowl from the fridge, but that would be a mistake! Sure, using cold butter isn’t going to ruin the recipe – after all, a chocolate chip cookie is pretty darn good no matter what, but you may be missing out! The reason most recipes call for room temperature ingredients is due to the chemistry behind mixing everything. For example, when sugar is mixed in with room temperature butter to make cookie dough, the rough edges of the sugar carve out tiny air pockets in the butter that allow the baking soda and/or baking powder to expand and create a light texture. So, your cookies will still be good, but they won’t be the best. Trust us on this, once you notice the difference, you’ll never go back!
