The peels and outer skin of vegetables aren’t considered the best and are even seen as coated with unhealthy sprays or caked with dirt. But these leftovers are a great way to add extra flavor without having to buy separate spices. If you are concerned about the cleanliness of certain peels and skins, you can wash your produce in a vinegar solution and rinse it off.

Here, TikTok user spicymoustache shows how scraps can become staples. After peeling the carrots and removing the onion skin, he sets them onto a baking tray and bakes them in the oven at 300 °F for ten to fifteen minutes.

Once the vegetable scraps are golden, they are broken down in a mortar and pestle with some salt. If you don’t have a mortar and pestle, you can simply break the scraps down in a food processor.

Even though they are flavorful as is, you can add in some cayenne or chili flakes to give them more heat. This seasoning has a mirepoix level of aromatic depth and would be perfect for baked potatoes, soups, stews, pastas, and dips.
