Many people go about cooking mushrooms the same way that they’d sautĂ© any other vegetable, but that’s just not the case. Here is a fool-proof way to get mushrooms with a sautĂ©ed golden color, meaty texture, and a rich, umami flavor.

TikTok user themodernnonna shows that making restaurant-worthy foods doesn’t require a back-of-house experience. In the case of mushrooms, they don’t follow the class steps of cooking with heated fat and salt.

Here the mushrooms start off in a dry ungreased nonstick skillet. Adding fat or salt in the beginning stage would prematurely draw the moisture out of the mushrooms, leading to a wet and rubbery texture.

Let the mushrooms cook in the dry pan, you’ll notice that they’ll start to get golden, but keep cooking them.

After a few minutes, the mushrooms will release loads of water. Continue to cook until the water has evaporated and the mushrooms behind get golden again.

At this point, you can add the butter, herbs, and salt. All of the water has been extracted from the mushrooms, making for a more satisfying texture.
