Walking to the ice cream shop by our house is an all-too-frequent occurrence in our family during the summers of years past, but that was before we realized how easy (and fun!) it is to make your own – no ice cream maker required!

This might not be new for those of you who did this in a science class in elementary school, but with a few plastic bags, some ice and some rock salt, you can make some pretty amazing ice cream…and in under 20 minutes! It’s true, all you have to do is pour your ice cream base into a plastic bag, then toss that bag into an ice-filled baggie, then just pass it off to the kids and let them shake the bag around for the next 15-20 minutes. Voilà! Homemade ice cream that tastes just as great as what you can find at the creamery!

Ingredients
  • 1 pint heavy whipping cream
  • 3 tablespoons frozen strawberries, puréed [16 oz. bag frozen strawberries]
  • 1/4-1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup rock salt or ice cream salt
  • 6-8 cups ice (no need to purchase)
  • 2 plastic, resealable gallon-sized bags
  • 1 pint strawberries, garnish
Preparation
  1. Combine whipping cream, strawberry purée, powdered sugar and vanilla extract in a large, resealable, gallon-sized plastic bag. Seal bag and mix everything together until fully combined.
  2. In a second, large plastic bag, place 6-8 cups ice and 1/2 cup rock salt. Insert ice cream mixture (still sealed in plastic bag) into the salty ice bag and seal. (Double bag if necessary, as bags can break at the seams.)
  3. Shake bag for 15 minutes, or until ice cream mixture resembles soft serve.
  4. Serve immediately, or place in freezer until ice cream sets to desired consistency.
  5. Enjoy!
  6. Optional: cut hole in corner of bag and “pipe” ice cream like soft serve.
