Sheet Pan Taco Pizza
This homemade taco pizza gives a whole new meaning to the Mexican pizza.

I first discovered the type of taco pizza with crushed up Doritos on it when I was a kid. To this day that pizza is such a vibe, but later in life I did discover this adult taco pizza in Chicago that used refried beans as the base and good salsa as the sauce. It blew my mind! This recipe has this traditional mozzarella top and with pickled jalapeno for toppings. Best part of this pizza recipe is you choose your adventure. It’s build your own taco on a pizza.

I start with fresh pizza dough. You can go store-bought or whatever is most convenient for the time you have. Fresh dough really makes a world of difference flavor wise and how the final texture of the dough turns out. If using store-bought dough be sure to let it come to room temperature before stretching and baking it. Letting it come to room temp helps to relax the gluten making it easier to stretch.

first you want to establish your base. I love the use of canned beans and jarred salsa here to establish your classic pizza. You can imagine how tasty this scales when you use your own pureed beans or homemade salsa. Yum!

Toppings are the best part of any pizza or taco so start with the essentials. Some shredded lettuce, diced tomatoes, and some mild jalapeno slices. You are in charge of the rest. Maybe you want to add an avocado crema on top or crushed up Doritos chips. You are the architect on this one, I just want to provide you with the inspiration. Happy pizza-ing.

For pizza:
- 1 lb. pizza dough
- 1 cup store-bought salsa
- 1 cup refried beans
- 1 lb. ground beef
- 1/4 cup chicken stock
- 1 tablespoon ground chili powder
- 2 teaspoons ground cumin
- 1 cup shredded Monterrey jack cheese
- 1 cup shredded cheddar cheese
For toppings:
- 2 cups shredded lettuce
- 2 cups diced tomato
- 1/2 cup white onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup mild pickled jalapenos
- Sour cream, for serving
Preparation
- Preheat the oven to 450° F and lightly grease a half-sheet tray with olive oil.
- Stretch pizza dough on a bench with a rolling pin to fit the length of the prepared sheet tray. Let the dough rest in the pan and let rest for 20 minutes to realign any dough that stretched back.
- Cook the beef mixture until cooked, drain excess fat, Set aside,
- Assemble the pizza with a spread of refried beans, then spread salsa mixture all over, then top with the beef mixture as the base, and finish with the cheese.
- Bake the pizza at 450º F for 12 - 15 minutes.
- Garnish with cilantro, onion, jalapenos, shredded icebergs, and diced tomatoes. Dip into sour cream.
