Ricotta Cake

Ricotta Cake
Ingredients
- 1 (15 oz) yellow cake mix, plus ingredients for preparation
- 16 oz ricotta cheese
- 2/3 cup granulated sugar
- 2 eggs
- 1/2 teaspoon vanilla
- powdered sugar, for dusting
Preparation
- Preheat oven to 350 degrees F and lightly grease a 9x13-inch baking dish.
- In a large bowl, prepare cake batter following directions on the package. Transfer batter to the prepared baking dish.
- In another bowl, combine ricotta, sugar, eggs, and vanilla. Mix until smooth.
- Spoon the ricotta mixture over the cake. Don’t worry about it being exactly evenly spread as it will sink to form the bottom layer.
- Bake for 40-45 minutes or until an inserted toothpick comes out clean.
- Allow cake to cool and dust with powdered sugar before slicing.
