If you’re headed to a backyard barbecue, pool party, or just looking for a fun new snack, these Poolside Pinwheels are the perfect thing to whip up. These colorful little bites are a party favorite for good reason: they pack a punch of flavor, come together in minutes, and don’t require any cooking. Creamy, crunchy, and just a little bit spicy, they’re the kind of appetizer that disappears before you’ve even had a chance to grab seconds. You may want to double the recipe!

We toss in a mix of red bell pepper, diced jalapeños, briny black olives, and fire-roasted corn for a smoky and sweet flavor combo. Green onions bring a touch of sharpness and subtle spice to every bite. Just be sure to really drain those canned ingredients well so your filling is firm enough to hold the pinwheels together. We recommend a quick blot with paper towels before mixing them into the filling.

Once everything is stirred together, it’s time to roll things up. Spread a thin layer over burrito-sized tortillas (the bigger, the better for slicing). Roll them up tightly, wrap them in plastic, and give them a short stint in the fridge. This chill time helps firm them up and makes all the difference when slicing, so don’t skip this step.

Ingredients
  • 2 (8 oz) packages cream cheese, room temperature
  • 1 (1 oz) packet ranch seasoning mix
  • 1/2 red bell pepper, seeded and finely diced
  • 1 (4 oz) can diced jalapeno, drained
  • 1 (6 oz) can black olives, drained and diced
  • 1 (15 oz) can fire-roasted corn, drained
  • 1/4 cup green onions, diced
  • 3-4 large burrito-sized flour tortillas
Preparation
  1. Drain all canned ingredients very well and pat dry with a paper towel to remove as much liquid as possible.
  2. Add cream cheese to a large bowl and mix until smooth. Add remaining ingredients (other than tortillas) and mix until well combined.
  3. Place a tortilla on a clean, flat surface and spread cream cheese mixture in a thin layer, leaving about a 1-inch edge on the left and right sides as these sections will be tossed after cutting. Roll tightly and cover with plastic wrap. Repeat with remaining tortillas and filling.
  4. Chill rolls for 45 minutes, then slice into rounds about ½-inch wide. Serve right away.
