Pizza Toast

There are some things that scream nostalgia from a mile away. Whether it was a quick light lunch on the weekend or an afternoon snack to tide you over before dinner, Pizza Toasts were there to fill the void. Here, this recipe is in homage to that tried and true childhood food.

The great thing about Pizza Toast is that they are adaptable and flexible to what you have on hand. They can be as fancy or as simple as you want them to be. First, the bread is toasted plain in the oven until slightly golden; this will prevent the sauce and cheese from making the bread soggy. After the bread has been toasted, spread a bit of tomato sauce on each slice. You can use a homemade tomato sauce as well as a jarred one.
Next, the cheese is added on top, followed by optional toppings. Again, you can get as fancy or as simple as you want. Here, a bit of ham and diced bell peppers are added on top.

The Pizza Toast gets its final bake in the oven until the cheese is golden and bubbly.

Pizza Toast

Ingredients
- 6 slices soft sandwich bread
- 12 tablespoons tomato sauce (about 2 tablespoons per slice)
- 1 1/2 cups shredded mozzarella cheese (about 1/4 cup per slice)
- Sliced pepperoni, chopped green bell pepper, diced ham, for additional toppings (optional)
Preparation
- Preheat oven to 400°F and line 1 large baking sheet with parchment paper, set aside.
- Place the bread onto the baking sheets and bake until slightly toasted, about 5 minutes.
- Remove from the oven and spread the tomato sauce on each toast (about 2 tablespoons per slice) and cover with cheese (1/4 cup per each slice). If you want to use additional toppings, add them on top of the pizza toast now.
- Return the toast to the oven baking for an additional 8 to 10 minutes or until the cheese is melted and bubbly. Serve warm and enjoy!
