Peppo’s Inspired Sandwich “Guts”
A sub sandwich condiment that is so much more than a sub sandwich condiment.

A jarring recipe title, but it makes sense doesn’t it? Sandwich guts are everything but the bread, cheese, and meat. It’s an all purpose condiment that covers the base of salt, juicy, zesty, and sour. It truly has it all! Pickles, tomatoes, onions, and seasonings tossed together. A beautiful combination that I can’t wait to share with you.

What Ingredients Are Sandwich Guts?
It’s all your favorite sandwich toppings chopped up and tossed in one bowl.
- GOOD pickles.
- Onions.
- Tomato.
- Celery salt.
- Garlic powder.
- Olive oil.
- Red wine vinegar.
The thing that makes this condiment stand out is all in the celery salt.

What is celery salt?
It’s a combination of crushed up celery seeds and salt. The flavor of the celery is pungent and strong that gives anything it’s added to a celery flavor.

A simple recipe needs very little explanation besides encouragement to try it. A restaurant in my area in the suburbs of Chicago introduced us to this amazing idea and we get it every time, even if we aren’t buying subs from them. It’s called “Peppos” and they have amazing food and developed this amazing idea for a recipe. A bowl of condiment you put next to your sub to dress it up. It not only prevents your premade sub sandwich from getting soggy or too wet with all these watery condiments, but it also makes for an easy application when you do want to add them. I’m obsessed.

Your guts are ready to go as soon as your done mixing. The salt will start to pull moisture from all the veggies, so if you’re making this ahead there will be excess liquid the next day. I LOVE this excess liquid because it acts as a delicious sub sauce I like to sometimes even dip my sandwich into.

Ingredients
- 2 cups sliced pickles, diced
- 4 Roma tomatoes, diced
- 1 1/2 cups white onion, diced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/4 teaspoon celery salt
- 1/2 teaspoon garlic powder
- Kosher salt and freshly cracked black pepper, to taste
Preparation
- Combine all the ingredients in a mixing bowl and season lightly with salt and pepper.
- Serve immediately or refrigerate overnight for best results.
