Oven Pancakes
An oven pancake typically served as a dessert with a custardy inside topped with your favorite pancake toppings.

These pancakes are very similar to a well-known Danish dessert called a Dutch Baby. This is the Finnish dessert that must be derived from the same area with a different technique. Such an EASY recipe! Whisk together eggs, milk, sugar, flour, and melted butter, then bake it until golden and fluffy. After the pancake settles we will top it with whipped cream and fresh berries. In America, we think about pancakes as a breakfast item, BUT in Finland this is a strict dessert and it’s DELICIOUS!

This recipe is part of a pancake party class that I taught to educate the 12 Tomato viewers on the pancakes of the world. It’s so interesting to discover the different ways us humans consider breakfast. As I mentioned, these pancakes are traditionally served as a dessert in Finland highlighting just how different food is around the world.

Why can’t all pancakes be THIS easy? American pancakes are fluffy pastries that we know with maple syrup and butter, but these pancakes are slightly sweet with a light tanginess. They are balanced between sweet and savory sometimes served with yogurt for the tang, fresh berries, and a drizzle of honey. My opinion, the best desserts are served with a balance of sweet and savory. You’d be shocked at what a little salt can do to your dessert.

The opportunities to serve this custardy pancake are endless. You can add cheese and serve this as a side dish to braised meat or stews. Who says pancakes are just for breakfast or dessert. Not me!

Prep this custard in advance and refrigerate to just wake up and pop straight in the oven. Easy as that!

Oven Pancakes

Ingredients
- 4 large eggs
- 4 1/4 cups whole milk
- 7 tablespoons unsalted butter, melted
- 1 tablespoons granulated sugar
- 1 teaspoon salt
- 2 cups all purpose flour plus 3 tablespoons
Preparation
- Preheat the oven to 480º F and prepare a greased parchment-lined 9x13 pan.
- In a bowl, whisk together the eggs and milk until thoroughly combined.
- Add melted butter, sugar, and salt to the mixture.
- Sift the flour into the mixture and continue to mix.
- Place the batter in a prepared 9x13 baking dish.
- Bake in the oven for 15 minutes, then reduce the oven temperature to 430º F and let continue cooking for an additional 15 minutes or until deeply golden on top.
- Remove from the oven and let cool for 5 minutes. The pancake will deflate. Serve with a dollop of Greek yogurt, honey and good preserves. Enjoy!
