To make a traditional cheesecake you need to dedicate a lot of time to the baking and cooling process and even then sometimes it can crack or turn out with a lumpy texture. But, with these no-bake strawberry cheesecake minis you can enjoy that creamy flavor with minimal fuss anytime you get a hankering- all without even turning on the oven.
The trick to getting a wonderful flavor without baking is to whip up some room temperature cream cheese with some sour cream. This is then folded in with some freshly-whipped cream for a texture that’s super silky and filled with flavor.
There’s a bit of the strawberry mixture blended into the cheesecake filling as well.
These luscious little desserts have a graham cracker base that’s also very simple to make- no baking required.
The strawberry “topping” is simply some strawberries mixed with sugar. The natural juices in the fruit melts and thickens the sugar.
If you’re making these ahead of time omit the strawberries from the both the filling and topping stages and add them to the desserts at the last minute- waiting to combine the strawberries with sugar until 15 minutes before serving.

No-Bake Strawberry Cheesecake Minis

Ingredients
- 8 graham crackers, crushed
- 4 tablespoons butter, melted
- 2 cups (9 oz) strawberries, chopped
- 1/2 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon lemon extract
- 8 oz cream cheese, softened
- 1/2 cup heavy cream
Preparation
- In food processor combine butter and graham crackers until sandy mixture forms. Reserve 2 tablespoons of crust mixture. Press majority of crust into 6 small bowls or dessert cups.
- Combine strawberries and sugar in a medium bowl. Let sit for 15 minutes.
- In another bowl combine sour cream, extracts, cream cheese and 1/4 of strawberry mixture. Mix with electric mixer on high for 2 minutes or until few lumps remain.
- In another bowl whip cream until stiff peaks form. Fold whipped cream into cream cheese mixture.
- Add some cream cheese filling to each bowl followed by some strawberries. Sprinkle reserved crust on top and refrigerate until ready to serve. If making ahead of time do not put strawberries on in cream cheese mixture or top until ready to serve, draining excess liquid if needed.
