But, with these no-bake strawberry cheesecake minis you can enjoy that creamy flavor with minimal fuss anytime you get a hankering- all without even turning on the oven.

No-Bake Strawberry Cheesecake Minis

The trick to getting a wonderful flavor without baking is to whip up some room temperature cream cheese with some sour cream. This is then folded in with some freshly-whipped cream for a texture that’s super silky and filled with flavor.

There’s a bit of the strawberry mixture blended into the cheesecake filling as well.

No-Bake Strawberry Cheesecake Minis

These luscious little desserts have a graham cracker base that’s also very simple to make- no baking required.

The strawberry “topping” is simply some strawberries mixed with sugar. The natural juices in the fruit melts and thickens the sugar.

If you’re making these ahead of time omit the strawberries from the both the filling and topping stages and add them to the desserts at the last minute- waiting to combine the strawberries with sugar until 15 minutes before serving.

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 8 oz cream cheese, softened

  3. In another bowl combine sour cream, extracts, cream cheese and 1/4 of strawberry mixture. Mix with electric mixer on high for 2 minutes or until few lumps remain.
