The flavors here are inspired by German and Polish dishes with just a hint of ground cloves cooked in with the apple cubes and shredded cabbage. It’s not sweet or overpowering- it’s just right.

Ingredients
  • 3 tablespoons olive oil
  • 1 small head red cabbage (about 1-1/2 lbs), shredded
  • 2 medium apples, peeled and chopped
  • 1 cup vegetable broth
  • 1 tablespoon brown sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground cloves
  • 3 tablespoons apple cider vinegar
  • 1 lb kielbasa sausage
Preparation
  1. Add oil to stockpot and heat over medium. Add cabbage and apples and cook for 3 minutes. Add broth, sugar, salt, pepper, and cloves. Cover and let simmer for 40 minutes. Check halfway through cooking and add more broth if mixture looks dry. Remove from heat and stir vinegar into cabbage.
  2. In separate pan fry sausage to preferred doneness. Serve cabbage with sausage.
