Brut sparkling wine is the key element in millionaire sparkling cheese dip, as it creates a stony minerality that helps balance out the richness from cream cheese and the pluckier, more jagged cheddar. When combined with nutmeg, ground chili and fresh parsley (earthy but bright and companionable flavors) the dip becomes a deliciously smooth but down to earth spread that works with a variety of vegetables, crispy bread, or snack biscuits. The other bonus? You need only a cup of sparkling wine to use in the recipe, which means you can use the bubbles for more traditional enjoyment.

Now, you could keep this spread chunky with cheddar cheese (and add another mineral element like chopped spinach or rocket), but for my money millionaire dip means smooth flavor and creamy cohesion. Ingredients
  • 8 oz. aged cheddar cheese, cubed
  • 8 oz. cream cheese spread
  • 1 Cup Brut Sparkling Wine
  • 1-2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon ground nutmeg
  • 1-2 teaspoons ground chili powder
  • 2 teaspoons tarragon
  • Kosher salt and black pepper, to taste
Preparation
  1. Add ingredients to the food processor or blender and mix until dip shows a fine consistency without lumps.
  2. Stir through and place into a suitable serving bowl. Refrigerate for a minimum of two hours.
  3. Garnish with fresh parsley sprigs, add salt and pepper to taste. Serve with fresh veggies, biscuits, or crusty French bread.
