How Do You Make Garlic Butter Chicken with Cheesy Breadcrumbs?
This dish comes together in a single pan!
Start by marinating your chicken breasts in a bowl with 1 tablespoon of the olive oil, salt, pepper, and smoked sweet paprika. Set aside while you make the breadcrumbs.

Start with the breadcrumbs by preheating a large skillet over medium heat then adding in your butter and olive oil. Once melted and foamy, add the breadcrumbs and cook, stirring constantly, until they are golden brown and crisp. Remove them to a bowl and allow them to cool completely before stirring in the grated parmesan cheese.

Wipe out that same pan then return it to the heat with the remaining olive oil. Once the oil smokes slightly, add your chicken to the pan and sear for 1-2 minutes on each side. Remove the chicken from the pan and cover with foil while you make the sauce.

Lower the heat to medium low, add your butter, then toss in the garlic and Italian seasoning with a pinch of salt and sweat for 1 minute. For the Chicken
- 2 lb boneless skinless chicken breast cutlets
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked sweet paprika
- 1 tbsp + 1 tbsp extra virgin olive oil, divided
- 1 tbsp + 3 tbsp butter, divided
- 4 garlic cloves, minced
- 1 cup chicken stock
- 1/2 tsp dry Italian seasoning
- 1 tbsp lemon juice
For the Breadcrumbs
- 3/4 cup panko breadcrumbs
- 1/2 cup parmesan cheese, finely grated
- 2 tbsp butter
- 2 tbsp extra virgin olive oil
For the Breadcrumbs
- In a large skillet over medium heat, melt the butter and olive oil together until foamy.
- Add the breadcrumbs and cook, stirring constantly, until golden brown and crispy.
- Remove to a bowl and allow to cool before stirring in the parmesan. The pan can be wiped out to reuse for the chicken.
For the Chicken
- Marinate the chicken in a bowl with 1 tbsp of the oil, salt, pepper, and paprika for 15 minutes.
- Return the skillet to medium high heat and add 1 tbsp of the olive oil.
- Sear the chicken on both sides for 1-2 minutes or until lightly browned and almost cooked through. Remove to a plate and cover with foil
- Add the remaining oil to the pan with 1 tbsp of the butter, the garlic, and the Italian seasoning with a pinch of salt and sweat for 1 minute.
- Add the chicken stock and lemon juice and reduce by half.
- Return the chicken to the pan with any resting juices and baste with the sauce.
- Turn off the heat and add the remaining 3 tbsp of butter, swirling to emulsify.
- Serve in the pan or on a dish topped with generous piles of the cheesy breadcrumbs.
