French Sable Cookies are the kind of treat that remind us why sometimes the simplest recipes are the best. With just a handful of pantry staples, you can create a cookie that’s buttery, tender, and subtly sweet with that irresistible sandy shortbread texture (“sable” literally translates to sandy in French!). This classic cookie manages to be both elegant and unfussy, making it just as perfect for afternoon tea as it is for holiday cookie trays. And with that sparkling sugar around the edges, they look just as good as they taste.

The dough comes together quickly, just butter, sugar, egg yolks, a touch of vanilla, and flour. A short chill in the fridge helps the dough firm up before you roll it into logs, and freezing ensures those beautiful, even slices when it’s time to bake. It’s worth the wait, because this step is what gives you those crisp edges and that melt-in-your-mouth consistency once they’re baked.

When it comes to finishing touches, these cookies are all about the details. Rolling the dough in sparkling sugar before slicing gives each cookie a subtle crunch and a festive edge. They bake up in just 7 to 10 minutes so you won’t be waiting long.
Whether you serve them with coffee in the morning, tuck them into a holiday gift tin, or keep them on hand for an afternoon pick-me-up, French Sable Cookies are the kind of recipe you’ll want in your back pocket year-round. One bite, and you’ll see why this French classic has stood the test of time.
