Cajun dirty rice is one of those classic comfort food dishes, and it comes with such a great name! We’re sure many a recipe box in the American South has a recipe card for dirty rice, and for good reason because it’s delicious! We love to whip up a batch on a busy weeknight because it’s quick and soooo comforting. And the name “dirty rice” always makes the family chuckle, because we all clean our plates when dirty rice is served!
It’s nearly as easy to whip up as it is tasty; just a few essential ingredients and we don’t even have to pre-make the rice, a definite time saver. Whether it’s the fun name or the mix of spicy with green pepper and sausage, this zesty dish is devoured by our hungry crew. If we’re lucky, there will be enough leftover for tomorrow’s lunch, but a meal this good usually doesn’t make it to the leftover stage!
Cajun Dirty Rice
Ingredients
- 1 1/2 pounds pork sausage
- 1 medium green bell pepper, diced
- 1 medium onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 1/2 cups long-grain rice
- 3 cups chicken broth
Preparation
- In a large skillet on medium heat, cook sausage, bell pepper, and onion until meat is browned.
- While the meat cooks, in a small bowl whisk together salt, pepper, cayenne, paprika, garlic powder, and thyme.
- Stir seasoning mix, rice, and chicken broth into meat mixture. Turn temperature to high and bring broth to a boil. Reduce temperature to low, cover, and simmer for 20 minutes or until rice is tender. Gently fluff rice with a fork before serving.
