I was so shocked at how good this came out the first time I made it. The contrast between the creamy mayo and avocado chunks with crunchy celery and cucumber you can her as you’re eating it. It looks like it’s going to be so much creamier with so much avocado, but it’s PERFECT!

The recipe is quite simple. Mix the dressing and toss it with the produce. There’s
not much too it. The fresh cilantro and scallion really makes this salad pop, but if you aren’t a fan of cilantro you can substitute with parsley or just omit. The fresh herbs with the fresh cucumber and lemon just adds to the overall refreshing-ness of the salad.

You can prep ahead by cutting up all your ingredients and making the dressing on the side. As soon as you add the dressing to the salad it will start to slowly leech out water from the cucumber, so serve this right away from serving. Don’t worry about the water accumulation if you save it overnight. It actually protects the avocado from going brown that first night, so you can enjoy it the next day too!

This is one of those salads you can mix up right before tacos are served on taco night, or at backyard BBQ with all the other deli salads, or even to have as a satisfying lunch. Try this out this with your summer grill outs and you won’t regret it. I’m sure it goes just as well on a winter night next to a gooey lasagna.
