With its creamy texture and mildly sweet and acidic flavor, this Creamy Blender Verde Sauce makes a great topping for so many dishes. This sauce works for anything Mexican like burritos or fajitas, or have it on rice, or even use it as dip for some crispy tortilla chips. This easy-to-make sauce gives you a big batch and you do most of the work in a blender or food processor to save time. Make it ahead of time for a fresh addition to any meal.

The first step is to cook down your tomatillos, green tomatoes, jalapeños and a few other ingredients. The green tomatoes ensure that color remains green and the tomatillos give a sweetness to the sauce that’s fresh at the same time. When these all cook down together you get the makings of salsa verde, a piquant sauce that’s a nice change of pace from the usual red salsas. You can adjust the heat by adding more or fewer jalapeños, but the 2 in this recipe balance with the other ingredients perfectly. It’s not too spicy while still being an interesting flavor.

Then after you let it cool off a bit add the cooked mixture to the blender or food processor along with some cilantro and 1 ripe avocado. You’ll want to run the mixture through the blender until it’s pretty smooth, with just a few larger speckles of cilantro visible.

Make sure you use a ripe avocado! If it’s not ripe the then avocado might be too firm to blend into the sauce, creating little chunks instead of blending into a creamy mixture. The avocado here is what makes this sauce extra special and gives it a buttery smooth texture.

This sauce is like a cross between salsa verde and guacamole with all the flavor you’d expect from such a combination. A thinner sauce with similar ingredients is commonly served with tacos al pastor in Mexico City, but it’s good with so many different types of dishes.

One nice thing about this sauce is that it has a high enough acid content to keep the avocado from turning brown, so it keeps in the fridge for a few days with no problems.

Ingredients
  • 2 medium green tomatoes, chopped
  • 5 large tomatillos, husks removed, rinsed and chopped
  • 1/2 white onion, chopped
  • 2 jalapeños, stemmed, seeded and chopped
  • 5-6 cloves of garlic, roughly chopped
  • 1 ripe avocado, peeled, pitted and sliced
  • 1/4 cup chopped cilantro
  • 1-2 tablespoons fresh lemon juice
  • salt and pepper to taste
Preparation
  1. Combine tomatoes, tomatillos, onion, jalapeños, and garlic in medium saucepan. Bring to boil then turn burner to medium-low. Simmer for 20 minutes. Add 1 tablespoon water at a time if mixture dries out during cooking. Remove from heat and let cool for 10 minutes.
  2. Combine tomato mixture with remaining ingredients in food processor. Pulse until smooth and uniform in color. Serve with tortilla chips or on burritos or fajitas. Keep leftovers in refrigerator for up to 4 days.
