One thing that sets this cobbler apart from the rest is that you use sweet, dark cherries (either fresh or frozen). Unlike the bright red, slightly tart varieties, the big, dark cherries have a much deeper and sweeter flavor.

Once you’ve lined the bottom of your baking dish with the pitted cherries and then poured the batter on top, there’s another step which also elevates this classic into the realm of heavenly. This last step is a zesty blend of cinnamon, cardamom, almond extract, and lemon extract.

Ingredients
  • 1 (20 oz) bag frozen dark cherries (or equivalent fresh, pitted)
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 3/4 cup boiling water
  • 1 1/2 teaspoons almond extract
  • 1/2 teaspoon lemon extract
  • Vanilla ice cream for serving (optional)
Preparation
  1. Preheat oven to 350°. Toss cherries into a greased 8”x8” baking dish. Set aside.
  2. In a large bowl combine flour, 1/4 cup sugar, baking powder, and salt. Add melted butter and stir. Add in milk and mix until just combined. Pour over cherries.
  3. In another bowl mix together cornstarch, cinnamon, cardamom, remaining sugar, extracts, and water. Pour this over dough. Bake for 45-50 uncovered or until top is golden brown and cherries are bubbling. Serve with vanilla ice cream if desired.
