One of my all-time favorite foods to entertain with is a flatbread. I always say you can put anything on a piece of bread and serve it to me as an appetizer. Imagine the best burger you’ve ever had and now just imagine it as a pizza. This recipe is done in less than thirty minutes and yields a ten times better product than making burgers for everyone. Save yourself some time and buy premade flatbreads crusts to make this recipe even easier.

When it comes to making burgers, the art is all in the doneness of the burger. Even a well-done burger should taste juicy if it’s not overcooked. When you’re making a recipe like this using ground beef, it’s important you don’t overcook your meat. Since we won’t have the juicy bite a burger typically has we use cheese. American cheese will hold the meat together while locking in the juiciness of the ground beef.

Speaking of cheese, use whatever cheese you have on hand. I like to use mozzarella as a classic pizza topping, but also because it’s a creamy melty neutral cheese. The last thing you want is your cheese standing in the way of your toppings.

Topping a cheeseburger is a personal thing, just don’t for a second doubt it belongs on the flatbread. If you are a mayo lover with cheeseburgers, you better squeeze some mayo on top. If you love barbecue sauce and bacon, same thing. The brilliance of a burger is it’s ability to be whatever you dream it to be. A burger and a pizza are just vessels for an end result, so fill that vessel with what you like.

Cheesy meaty bread things are always a hit for everyone. Make these ahead and bake them right before service. The store-bought flatbreads freeze really well, so stock up the next time you pass a package in the store.

Ingredients
  • 2 stone fire flatbreads
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons sesame seeds
  • 1 lb. ground beef
  • 6 slices American cheese
  • 2 Roma tomatoes, ½’ thick sliced
  • 2 pickles, sliced very thin
  • 1 lb. whole milk mozzarella, freshly grated
  • Ketchup and mustard, for drizzling
  • Garlic aioli & baby arugula, for garnishing
Preparation
  1. Preheat the oven to 375° F and prepare two parchment-lined sheet trays.
  2. Brush melted butter around the edges of the premade flatbreads and sprinkle the sesame seeds around the edges on the prepared sheet trays. Par-bake for 10 minutes.
  3. Preheat a saute pan over medium-high heat, then add ground beef to the pan to brown. Season with salt and pepper.
  4. When the beef is browned, drain the beef and add back to the pan with sliced American cheese.
  5. Assembly flatbreads with a zigzag drizzle of ketchup in the center of each flatbread, followed by mustard. Top with mozzarella cheese, then ground beef, red onion, and sliced tomato.
  6. Bake flatbread in the oven for 12 - 15 minutes or until cheese is bubble and crusts are deeply golden.
  7. Finish your flatbread with garlic aioli and sliced pickles. Slice and enjoy!
