Brunch is the ultimate weekend luxury. It’s a delicious way to wake up, having slept in on a lazy morning. We’re looking to extend that comforting feeling to our table, and there’s no better way to do so than to enjoy crepes and bacon. Rather than the go-to standbys of pancakes and sausage, this morning we’re whipping up Raspberry Nutella Crepes and Candied Maple Bacon. Are you drooling yet?

Candied Maple Bacon, as if bacon could get any better than it already is in its natural state. To candy the bacon takes just a little bit of savory first, then sweet, to bring out the best of deliciousness here. It starts by painting the strips of bacon with Dijon mustard. This savory element brings in a slight tang to pair well with the naturally salty bacon and the sweetness of the next toppings: brown sugar and maple syrup. Maple syrup and brown sugar create a caramel-sticky layer to the crisp smoky bacon, so the bacon gets even crispier!

For those of you looking for a little more adventure, we recommend adding a little heat to the bacon in the form of Calabrian chili. Calabrian chili is capital H hot but it’s so incredibly good here. That sweet and salty chili heat brings this bacon right up to platinum status. It’s a heat that strikes a delicious balance with the Raspberry Nutella Crepes.

Candied Maple Bacon
Yield(s): Serves 6

Ingredients
- 1 lb. Thick-cut bacon
- 1/4 cup Dijon mustard
- 1/4 cup maple syrup
- 1 tablespoon Calabrian chili paste (optional)
- 1/2 cup brown sugar
Preparation
- Preheat the oven to 350° F and prepare a parchment lined sheet tray with a wire rack.
- Layout bacon slices evenly over a wire rack lined sheet tray.
- In a small bowl, combine dijon, maple syrup, and chili paste. Using a brush, brush each strip of bacon with a layer of sauce.
- Sprinkle each strip of bacon lightly with brown sugar and evenly pat brown sugar into bacon.
- Bake for 25 - 30 minutes, rotating the pan halfway to ensure even browning. Enjoy!
