Black Cherry Jello Salad

Ingredients
- 1 (15 oz) can pitted Bing cherries
- 1 (20 oz) can crushed pineapple
- 1 (6 oz) box black cherry Jello
- 1 (8 oz) block cream cheese, softened
- 1 cup carbonated soda, cola or lemon-lime flavored
- 1 cup chopped pecans
Preparation
- Drain the juice of the canned cherries and canned pineapple into a large saucepan. Heat over medium-high heat until boiling, then add jello powder and mix until combined. Remove from heat.
- Add softened cream cheese and mix until well combined.
- Add soda and whisk until airy. Gently fold in the drained cherries, crushed pineapple, and pecans.
- Pour mixture into a 9x13-inch dish or large bundt mold.
- Chill for 4-6 hours or until fully set.
- Slice and serve chilled. Top with whipped cream if desired.
