While we may not need to worry about shooing flies away from a pie cooling in the windowsill as much these days, this Amish classic will still have you shooing the family away until after dinner. Loaded with molasses and sweet baking spices, and ready to go in the oven in minutes, this sweet treat might just become your new favorite pie!

- Brown Sugar

- Nutmeg
- Salt
- Butter
- Baking Soda
- Molasses

How Do You Make Amish Shoofly Pie?
Start by preheating your oven to 450 degrees and unrolling your store-bought pie crust into a 9-inch pie pan, crimping the edges with your fingers or a fork for decoration. Make sure to trim off any excess crust hanging over the edges so you don’t have to worry about cleaning them up after baking.
Next up grate your cold butter on a cheese grater so it’s easier to cut into the dry ingredients. Grab a bowl and combine your flour, sugar, cinnamon, nutmeg, and salt, then whisk to combine. Toss in your cold grated butter and use your fingertips or a pastry cutter to work the butter into the dry mix. When the texture resembles wet sand with pea-sized pieces of butter still visible, you’re good to go. In a separate bowl, whisk the baking soda into the molasses, then carefully pour in the boiling water and whisk carefully to combine. Pour this liquid into the pie pan, then sprinkle the crumb topping evenly across the surface.


Bake for 15 minutes, then reduce the oven temperature to 350 degrees and bake for an additional 20 minutes. As good as it smells, it’s important to let it cool completely before slicing!

Ingredients
- 1 pie crust, 9 inches, store-bought
- 1 1/2 cup all purpose flour
- 1 1/2 cups brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon kosher salt
- 1/4 cup butter, cold, grated on a box grater
- 3/4 cup molasses
- 3/4 cup water, boiling
- 1/2 teaspoon baking soda
Preparation
- Preheat your oven to 450 degrees and prepare a 9 inch pie pan with your crust, crimping the edges for decoration with your fingers or a fork.
- In a bowl, whisk together the flour, sugar, cinnamon, nutmeg, and salt.
- Add the butter and use a pastry cutter or your fingertips to cut the butter into the dry ingredients until the texture resembles wet sand with pea-sized pieces of butter still visible - set aside in the fridge.
- In a separate bowl, whisk the baking soda into the molasses, then add the boiling water and carefully mix to combine.
- Pour the molasses mixture into the pie pan on top of the crust, then evenly scatter the dry mixture across the surface all the way to the edges.
- Bake on the middle rack for 15 minutes, then reduce the oven temperature to 350 degrees and bake for an additional 20 minutes.
- Allow to cool completely before slicing.
