We love having a few easy dessert recipes to whip out when the occasion calls for it. Don’t get us wrong – we also enjoy putting time and effort into a delicious, decadent dessert, but sometimes you just need a quick treat, and you need it ASAP! These cake mix cookies are perfect if you’re looking for an easy sweet treat that’s a little different than your run of the mill chocolate chip cookies. Go ahead and check out all the different options!

S’Mores Cookies

What a fun take on cookies! Who doesn’t love s’mores? For this recipe, you’ll need the basic cookie dough base – the cake mix (devil’s food), two cookies, and a 1/2 cup of oil. There are a few ways to get the s’mores flavor. The first way is to mix in S’Mores cereal. Yes, in case you didn’t know, there is a s’mores cereal. Yum. If you can’t find the cereal, however, you can still add mini marshmallows into the batter and a sprinkle of crushed graham crackers. The batter will be very thick, so it’s easiest to scoop the cookie dough with a little scooper. Bake at 350 for 10-12 minutes, and let cool! You can always spread on some marshmallow cream (recipe below) and make cookie sandwiches, or use the cream as frosting!

Funfetti Cookies With Marshmallow Filling

Ah, yes, the childhood classic: funfetti. Sure, it’s sugary and almost too sweet, but it tastes like nostalgia, doesn’t it? These sandwich cookies are perfect for a special birthday treat to share around the office. The cookie dough itself is super easy to make – just like in the s’mores recipe, you’ll just need the cake mix (funfetti cake mix, of course), two eggs, and 1/2 cup of oil. Bake at 350 for around 10 minutes.

While the cookies are cooling, go ahead and whip up the marshmallow cream filling. Start by creaming a stick of butter at room temperature. Then, add 1 1/2 cups of powdered sugar and mix in completely. Finally, add 8oz of marshmallow spread. When the cookies are completely cooled, spread the cream on and enjoy!

Lemon Meringue Cookies

This is such a creative idea! We’ve never heard of this method before. Start with 8oz of Cool Whip and two beaten eggs. Mix until combined. Add in the lemon surpreme cake mix and stir until everything is mixed in well. Bake at 350 for around 8 minutes.

White Chocolate Strawberry Cookies

These cookies are so colorful and a perfect treat for any occasion! Mix strawberry cake batter, two eggs, and 1/2 cup of oil. Then, stir in white chocolate chips and bake at 350 for around 10 minutes. Easy peasy!

Double Chocolate Chip Cookies

If you’re in the mood for an extra-indulgent treat, these double chocolate chip cookies will relaly hit the spot! Start with, you guessed it, devil’s food cake mix, two eggs, and 1/2 cup of oil. The original recipe calls for mini dark chocolate chips, but you can switch it up with peanut butter chips or butterscotch chips for a special twist. Bake at 350 for 10-12 minutes.
