Got a box of noodles? Sure, you can do Italian flavors, but isn’t there something else? Enter Thai food. You don’t need to go to a specialty store to bring the flavors of Thailand home. Ingredients like peanuts, sesame oil, and sriracha are quick additions to have a completely different flavor profile. None of these dishes are spicy. All of our recipes have a bright and refreshing zip and are agreeable to many picky palates. So when you’re stuck in a pasta rut, use any of these four recipes below and you’ll have a surefire success!

Thai Spaghetti Salad

What do you think of when you think of pasta salad? Curly rotini, some cheese and veggies, and some bottled Italian dressing? That does seem to be the go-to. But the nice thing about pasta salad is that it’s actually so versatile, you can combine any number of flavors and textures and end up with a great result. Take this Thai Spaghetti Salad, for instance. It’s as quick and easy as any other pasta salad, but it has an entirely different flavor profile – it’s full of crunchy, bright veggies, tender spaghetti, and a creamy peanutty dressing that’s good enough to eat off of a spoon all by itself.

Thai Red Curry Noddle Soup

I think the last time I wrote about a soup I told you that it was my very favorite one, but the problem was that I hadn’t made this soup yet. And see, while this soup may not be the chicken noodle soup you’re used to, it is every bit as comforting and probably even more delicious. (Or at least I clearly think so.) It’s still full of slurpable, comforting noodles but it’s surrounded by a broth that’s both mildly sweet and spicy and chock full of nourishing veggies and hearty chicken. I’m not one for leftovers but I finished every last drop of this and since this makes a lot, that’s saying a lot.

Thai Pasta Salad

When you think of pasta salad, you probably think of macaroni salad and a creamy mayo-based dressing. This is not that. But it definitely is pasta salad – full of chewy rotini, a rainbow of crunchy veggies, and a peanut dressing that’s creamy in a different way but delicious enough that you’ll want to slurp it off a spoon. (Can you say that about macaroni salad? Not so much.) It’s Thai-inspired and totally tasty and a great way to liven up any potluck or picnic.

10-Minute Peanut Thai Noodles

Some days you just need a quick and easy dinner to fall back on. My default is often to order takeout if I don’t feel like cooking or don’t have the time, but not anymore! Now that I have this peanut Thai noodle recipe, I can make one of my favorite takeout dishes right at home in just 10 minutes.
