Thanksgiving is all about gratitude, but sometimes it feels like it’s all about the leftovers. (Which are something to be grateful for all on their own.) You can throw them together in a sandwich, or just reheat ’em on a plate, but this “lasagna” is a little more of a creative way to compile them. It’s an easy layered affair that gets all the best flavors of Thanksgiving together in every bite, and so it’s quickly become our top choice of how to enjoy the remainders of a feast.
There are no noodles here, just layers of the best parts of Thanksgiving, which is how this bake earned its ‘lasagna’ name. We’ve used the components that go together best – mashed potatoes, stuffing, turkey, and cranberry sauce – but this is versatile enough that you could add in some sweet potato casserole or whatever you see fit. (But maybe leave out the green bean casserole and the ambrosia.)
All you have to do here is layer and bake, and maybe pour on a little gravy when you’re ready to serve. (Which is good because you’re probably not feeling really ready to spend a lot of time in the kitchen quite yet.) As it hangs out in the oven and gets hot and bubbly, the flavors meld and unite so when you serve this, you get a unified, undiluted slice of Thanksgiving synergy. It just might be better than the original meal itself!
Thanksgiving Leftovers Lasagna
Yield(s): Serves 4

Ingredients
- 3 cups prepared stuffing
- 1 (14 oz) can cranberry sauce
- 1 pound cooked turkey, sliced
- 3 cups mashed potatoes
- 2 cups fontina or gouda cheese, grated
- Brown gravy, for serving
Preparation
- Preheat oven to 400°F and grease an 8-inch square baking dish with nonstick spray.
- Spread half of the stuffing into the bottom of the prepared pan, followed by half of the cranberry sauce. Layer turkey slices over the top, followed by half of the mashed potatoes. Sprinkle half of the cheese over the potatoes and repeat layers one more time.
- Bake until cheese has melted and center is warmed, 20-25 minutes. Broil on high to brown cheese if desired. Slice, serve, and enjoy!
