If you’re looking to add a delicious kick to your summer dinner, we have just the recipe! This Spicy Corn Slaw is the perfect balance of crunchy and creamy, with sweet pops of corn in every bite. Since it starts with a bag of cole slaw mix, it’s super easy to prepare and can be made ahead of time so you have one less dish to worry about. Our kind of recipe! Let’s get into how it’s made…
As we mentioned, the base of this dish is a good old bag of cole slaw mix. You’re welcome to shred a head of cabbage yourself, but we love the convenience of the bag mix. Mix in a couple cups of corn (fresh or frozen), a minced jalapeno, cilantro, and green onion. We removed the jalapeno seeds in this recipe, but if your crew can take the heat you’re welcome to leave them in. Whisk together a simple mayo based dressing and toss it all together. Easy as that, your slaw is ready!
I served this Corn Slaw with tacos and it was a huge hit! Some folks even loaded it on top of their tacos. It would also be a great side dish for a barbeque or seafood. Nothing says summer like fresh corn and this dish is a beautiful way to highlight the season’s bounty. Since it’s such an easy recipe to whip up, you’re sure to turn to this spicy dish again and again. Hope you enjoy it as much as we do!
