Slow Cooker Balsamic Chicken

Ingredients
- ½ cup balsamic vinegar
- 3/4 cup chicken broth
- ⅓ cup brown sugar
- 1 tablespoon dijon mustard
- 4 cloves garlic, minced
- 8 boneless chicken breasts
- 1 teaspoon oregano
- ½ teaspoon basil
- ½ teaspoon thyme
- ½ teaspoon rosemary
- ½ teaspoon red pepper flakes
- 1 teaspoon black pepper
- ½ teaspoon salt
Preparation
- Mix together balsamic, broth, brown sugar, dijon, and minced garlic in the bottom of your slow cooker.
- Trim fat of the chicken breast if desired, then seasoning generously with herb mixture, salt, and pepper.
- Arrange chicken in the slow cooker and stir to coat with the balsamic mixture.
- Cover slow cooker and set to high for 3-4 hour or low for 6-8. Chicken is done when internal temperature reaches 165 degrees.
- Optional: Once chicken is fully cooked, spoon juices from the slow cooker into a small saucepan and simmer on medium to reduce. Add 1 teaspoon corn starch for a thicker sauce.
