If you’re looking for a treat that is easy to make, but will still impress… then this is just the recipe! Our Pistachio Log boosts a sophisticated flavor and rich texture that is sure to have everyone coming back for another slice. The best part might be that no baking is required, that’s right, you don’t even have to turn on the oven. Just mix it all together, form the log shape, and pop it in the fridge to set. Can’t beat that for simplicity!

You’ll start out by crushing graham crackers into crumbs that are a sand-like texture. I usually do this in a large plastic bag and a rolling pin, but you can also just break them up with your hands. The crumbs are added to a rich mixture of heavy cream, pistachio cream, salt, and cardamom. Then, a handful of chopped pistachios are added for an extra crunch and pop of color. The dough should be thick and a little sticky at this point.

Divide the dough into two portions, form them into smooth log shapes, and tightly wrap them up. Place the logs in the fridge for at least 4 hours or ideally overnight to firm up. When it’s time to enjoy, slice the logs into small rounds and dig in. This dessert is perfect for any occasion, from the holidays to a quick summertime treat (when you don’t want to turn on that oven!). Whip up this easy recipe and I’m sure it will be a new fav!

Ingredients
  • 1 (14.4 oz) box graham crackers
  • ¾ cup heavy cream
  • 1 cup pistachio cream
  • ½ teaspoon salt
  • ¼ teaspoon cardamom
  • 3/4 cup pistachios, roughly chopped
  • 1/3 cup powdered sugar
Preparation
  1. Place graham crackers in a large ziplock bag and crush into a sandy texture.
  2. In a large bowl, add heavy cream and microwave for about 30 seconds or until warmed. Add pistachio cream, salt, and cardamom and whisk until smooth.
  3. Add crushed crackers, pistachios, and powdered sugar to the bowl and mix until well combined.
  4. Set out two large sheets of plastic wrap and spoon half the mixture onto each one. Form mixture into log shapes and wrap tightly.
  5. Place logs in the fridge for at least 4-6 hours or until firm.
  6. Slice into bite-sized rounds and enjoy.
