Fairy Food 8-min copy

If you’ve never heard of this treat before you aren’t alone. Also known as Angel Food Candy, Fairy Food is most popular in the state of Wisconsin and often made around the holidays. A midwestern friend mention it recently in conversation and it sounded intriguing enough that I had to give the recipe a go. It’s a hard treat to describe, but overall I’d say it’s an airy candy with a toffee or caramel flavor. Most versions of the recipe dip the harden candy in chocolate, a step I would highly encourage you not to skip.

The ingredient list had a few surprises and I really wasn’t sure what to expect. Vinegar in a candy was the real curveball, but I had faith in the process! You start out on the stovetop by brining a mixture of sugar, corn syrup, and vinegar to 300 degrees. Once you’ve reached that temp, remove the pot from the heat and immediately whisk in the baking soda. At this point the mixture will foam up and lighten in color. Pour it out on a baking sheet and don’t worry about the shape or spreading it out to the edges. Allow the candy to fully cool, then break it into bite-sized pieces. Melt your favorite chocolate and dip the pieces in for a sweet final touch.

Give it a try for your next special occasion and it’s bound to become a new favorite.
